Garden Vegetable Soup

Ingredients:

2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves, minced
3 cup fat-free broth (beef, chicken, or vegetable)
1 1/2 cups diced cabbage (optional I never put it in)
1/2 cup green beans
1 tablespoon tomato paste (or if you like tomato vegtable soup 1 can)
1 can diced no salt tomatoes
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/2 cup diced zucchini

Directions:

  1. Add broth, cabbage, beans, tomato paste, tomatoes, basil, organo, and salt; bring to boil. Lower heat and simmer, covered about 15 minutes or until beans are tender.
  2. Stir in zucchini and heat 3-4 minutes. Serve hot

Notes: I usually just put everything into the pot after step 1, if you want you can add cooked pasta, kidney or white beans, cooked leftover meat.
